Cast Iron Cod Filets

If you know me, I’m all about wild fish….and fish at least twice a week! It cooks up so quickly and the flavours you can add are impeccable! I also LOVE my cast iron skillet and wonder quite often why it took me so long to start using one in my meal prep life! Honestly, makes making dinner faster, tastier, and healthier! Check out this flavourful cod recipe, or switch it up for halibut steaks too….OH, and you’ll want to reserve the extra sauce for later!

Serves 4 people

Ingredients:

  • ¼ Cup Butter, melted
  • ½ Lemon, juiced
  • ¼ Cup Fresh Parsley, chopped
  • 1 tsp Salt
  • ½ tsp Fresh cracked pepper
  • 2 Cloves garlic, minced
  • 2 Tbsp Capers
  • 2 Tbsp Olive Oil
  • 4, 5-oz Wild Cod Filets
  • 3 Cups Cherry tomatoes, rinsed and dried

Directions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Rinse the cod filets and place on a paper towel.
  3. In a mixing bowl, combine the butter, lemon juice, parsley, salt, pepper, garlic and capers. Mix well to incorporate all ingredients.
  4. Remove cod from paper towel and coat the fish in the marinade.
  5. Heat 2 Tbsp of olive oil in a cast iron skillet over medium heat. Once hot, add the fish filets and cook for 2 minutes on each side.
  6. Prior to placing in the oven, add the remaining marinade to the tops of the filets and cherry tomatoes around the pan.
  7. Bake in the oven for 10-12 minutes until cooked through and flaky inside.
  8. Plate with a scoop of cherry tomatoes and your favourite vegetable side dishes.

*You will have some extra marinade. Keep this! It’s amazing with a light spaghetti with some shrimp or calamari.
