Fruit and Vegetable Salad

Just in time for Barbecue season, and summer vacation!! Here’s one the kids will love too!  I haven’t made this dish in a while and today when I chopped up all of my vegetables and fruit it made me think about summer, barbecues and enjoying fresh, crisp flavours.  So colourful!  Be the one to bring this one to your next summer pool party and get everyone talking!  Enjoy!

Serves: 10-12 (depending on portion)

Ingredients:

  • 2  Carrots, peeled
  • 3  Celery Stalks
  • 1  Red Bell Pepper
  • 1  Red Apple
  • 1  Pear
  • 1  Mango, firm and ripe, but not over-ripe
  • 1  Pint Blueberries
  • ½ C  Nuts or seeds of choice (cashews, peanuts, walnuts, pumpkin seeds, sunflower seeds)
  • ⅓ C  Golden Raisins
  • 1 tsp  Honey
  • 1 Tbsp  Apple Cider Vinegar

Directions:

  1. Wash all vegetables. Prepare your cutting board, knife, garbage bowl and a large bowl to place the salad in.
  2. Cut the carrots, celery, bell pepper, apple, pear, and mango into small pieces, relatively the same size as the blueberries.
  3. Add the blueberries to the bowl; stir to mix.
  4. Add the honey and apple cider vinegar, stirring to combine all of the flavours. Allow to set in the fridge or eat right away.
  5. Toss the nuts or seeds of choice into the salad just before serving.
